Getting Back on Track

I'm back ya'll (make sure you read that in a gangsta-like voice)! Things have been busy around here. I had a birthday- whoop whoop! I hit the big 2-4. I know, I'm old. Whatevs. So that whole birthday weekend kept us busy with family dinners and a fun date night that may or may not have included a trip to Target where I tried on adult zebra-style footie pajamas. It was grand. Then Derek had to go up to Phoenix to get video of a conference, so we used it as an opportunity to hang out with some friends that live there. And to top it all off Toby is teething. Why didn't anyone warn me that two little teeth- that are just going to fall out of his face in a few years- would cause my child to become a cranky Klingon?

But I have not forgotten about my little personal challenge, of which you all are polite enough to feign interest. Bless you.  

Pinterest Challenge Subjet #1-
Because I'm a hopeless foodie, I figured the easiest place to start would be my Yummm board. I started with something that seemed idiot proof with potential to please taste buds. This easy peasy recipe achieved both:

Chicken, Spinach, Goat Cheese Quesadillas with Avocado Sour Cream


I started with some tor-til-las. I get mine from the Costco.

Next I shmeared on some goat cheese and sprinkled on some monterey jack like it was fairy dust.









Then I added the spinach. I kind of cheated by not cooking it with the spices. I know, I'm a rebel.

Topped it all off with the chicky. The recipe didn't say what kind of chicken, so I just seasoned some chicken tenders with the holy trinity of cooking (salt, pepper, garlic) and tossed it on the grill. 

I have a griddle so it was like a fast food joint in the kitchen. 






The final result was super yummy for the tummy.








I forgot about the avocado sour cream until after I made the quesadillas. Oops. I had some avocados but no sour cream so I just substituted cream cheese. It was still really good.

I really liked this recipe because it took one of the easiest meals and gave it some sophistication. The goat cheese gave it a unique tang, but the monterey jack was what gave the whole thing that gooeyness that we all love about quesadillas. I should come up with some sort of personalized rating system (because I have endless amounts of time), but I highly recommend this if you're looking for something that's not hard to whip up but still tantalizes your tongue. *I'm reading this back to myself and I totally think that I should start a career as a food critic*
